We will now 'downgrade' our dev setup and see what happens.

As far as WP3.0 goes, it's working well but beware if you are using custom post types and taxonomies and want to utilise 3rd party plugins. Most of them don't cater for those features yet so you will need to hack them. Also the WP 3 menu editor is in flux.
